Real, raw or made with minimal intervention, natural wines are creating a lot of noise these days. Be it their rebellious nature, message of environmentalism or the eccentric community around them, natural wines appeal to everyone, not just the hipsters.

With the same rebellious nature, we welcome autumn in our kitchen. It’s a time of change, adventurous change. The brightness of summer slowly dims away, but the flavours in Chef Shayne’s mind remain explosive, vibrant and reactive.
