Set in the iconic Customs House Hotel, we are bringing some of the Hunter Valley Wine Country to the coast! Join Jimmy Joans for an exclusive food and wine experience, PAIRED, with brothers and best mates Head Chef and Co-owner Thomas Boyd and Bimbadgen Assistant Winemaker, Samuel Boyd.

Thom and his team will curate a 4-course menu, and he has roped in his identical twin brother, Sam, to pair it with matching wines. Having completed vintages in Perpignan, Südtirol, and, of course, the Hunter Valley, there will be local and international pairings. Expect to see a reflection of his travels. With four courses with matched wines, the brothers will endeavour to create the perfect pairing.
