Ceremony and performance will introduce a four-course menu of native flavours enhanced by traditional cooking methods in an evening that will bring you closer to country. Hear from traditional foodmakers of the journey of the native ingredients in each course and be immersed in the sounds of the habitats they grow in.
Chef, Alex Hunter’s menu will be guided by traditional cooking methods and ingredients sourced from the local Yamuloong gardens. Wonnarua and Gamillaroy man, Corey Grech from Native Foodways will work alongside him in the kitchen and will take you on a journey through each course. Hear of traditional foraging, ancient sustainability and future growing practices of these ingredients in the native food system.
Local Connections restaurant opens in the evening once a month, this is a chance to enjoy chef Alex Hunter’s Michelin-starred experience in this most unexpected location. We can facilitate transfers to the Warabrook train station or to the city on our NuSpace shuttle if needed.
