We are thrilled to announce that for Newcastle Food Month 2025, we will be collaborating with the esteemed Japanese ramen chef Hiroya Aoyama!

Owner Taiyo first met Hiroya in Tokyo back in 2010 when he was still honing his craft. Since then, Hiroya has opened his own ramen restaurant in Taiwan and is now planning to expand. He has dedicated his life to perfecting his signature Dajio Ramen, a dish so exceptional it often draws long queues wherever it is served.
